Mini Matcha Banana Muffins

INGREDIENTS

  • • 2 ripe bananas, sliced
  • • ¼ cup butter, softened
  • • 2 eggs
  • • ½ cup coconut flour
  • • ½ tsp baking soda
  • • ½ tsp baking powder
  • • 2 tsp Aiya Culinary Grade Matcha
  • • ¼ cup coconut sugar (optional)

DIRECTIONS

  • 1. Preheat oven to 350°F.
  • 2. Grease a muffin tin or line with 12 muffin liners.
  • 3. Using an electric mixer, combine eggs, softened butter and sliced bananas. Mix until well combined.
  • 4. In a separate bowl, combine together coconut flour, baking soda, baking powder, Matcha and sugar (optional), until uniform. Add to wet ingredients and mix until well combined.
  • 5. Divide batter evenly into 10-12 muffin tins.
  • 6. Bake for 18-20 minutes. Cool on a rack, then enjoy!
