Mini Matcha Banana Muffins

Sweeten your mornings with this Matcha collision of your favorite breakfast treats: banana bread and muffins!

INGREDIENTS
- • 2 ripe bananas, sliced
- • ¼ cup butter, softened
- • 2 eggs
- • ½ cup coconut flour
- • ½ tsp baking soda
- • ½ tsp baking powder
- • 2 tsp Aiya Culinary Grade Matcha
- • ¼ cup coconut sugar (optional)
DIRECTIONS
- 1. Preheat oven to 350°F.
- 2. Grease a muffin tin or line with 12 muffin liners.
- 3. Using an electric mixer, combine eggs, softened butter and sliced bananas. Mix until well combined.
- 4. In a separate bowl, combine together coconut flour, baking soda, baking powder, Matcha and sugar (optional), until uniform. Add to wet ingredients and mix until well combined.
- 5. Divide batter evenly into 10-12 muffin tins.
- 6. Bake for 18-20 minutes. Cool on a rack, then enjoy!
