Matcha Red Bean Frappe

Take a break from the heat with this blended Matcha Red Bean Frappe layered over sweet Japanese azuki beans and topped with fluffy whipped cream!

 INGREDIENTS
- • 1 packet of Sweetened Matcha To Go
 - • 1 cup ice cubes
 - • ¾ cup milk of choice
 - • ½ cup red beans (soaked overnight)
 - • Water (to boil)
 - • 2 Tbsp sugar
 - • Whipped cream
 
 DIRECTIONS
- Sweetened Red Beans
 - 1. In a small pot, add red beans (soaked over night) and 2 cups of water. Bring to a boil, then reduce to low heat. Cover pot with lid and let it simmer for 20 minutes.
 - 2. Drain the beans and add water again until 2 cm higher than the beans level. Bring to a boil, then reduce to low heat. Cover with lid and let is simmer again for 20 minutes.
 - 3. Turn heat off and leave it covered for another 10 minutes.
 - 4. Lastly, stir in sugar until fully dissolved.
 - 5. Let cool and chill in the refrigerator until ready to use.
 - Matcha Frappe
 - 6. In a blender, blend 1 packet of Sweetened Matcha To Go, ice cubes, and milk together.
 - 7. Pour matcha frappe into a glass and layer on sweetened red bean (or vice versa).
 - 8. Top with whipped cream and garnish with mint (optional).
