Matcha Naan and Shrimp Cream Stew

Naan is the bread most commonly eaten in India and Central Asia. With a beautiful light green hue, we further highlight the Matcha aroma of this naan by pairing it with a light shrimp cream stew.


Matcha Naan and Shrimp Cream Stew

INGREDIENTS

  • Matcha Naan
  • • 1 Tbsp Aiya Culinary Grade Matcha
  • • 1 ¾ cups flour (all purpose or bread)
  • • 1 cup flour (all purpose or cake)
  • • 2 Tbsp sugar
  • • 1 tsp salt
  • • 2 oz dry yeast
  • • ¾ cup lukewarm water
  • • 3 Tbsp yogurt
  • Shrimp Cream Stew
  • • 7 oz shrimp
  • • ½ onion
  • • 3 ½ oz mushrooms
  • • 2 Tbsp butter
  • • 1 Tbsp flour (all purpose or cake)
  • • 3 Tbsp white wine
  • • 1 cup cream
  • • Salt and pepper, to taste

DIRECTIONS

  • Matcha Naan
  • 1. Sift the Matcha, flour(s), sugar, and salt into a bowl, add the yeast and lukewarm water, and mix together.
  • 2. Add in the yogurt and mix well. Once it comes together, continue to mix for about 5 minutes.
  • 3. Once the dough is completely smooth, form it into a ball, place in a bowl, and cover with plastic wrap. Place it in a warm place and allow to rise for about 1 hour.
  • 4. Once the dough has expanded to approximately twice its original size, knead it again to remove any air pockets and split it into 8 pieces.
  • 5. Lightly dust a work surface with flour and roll each piece of dough out with a rolling pin until it is thin.
  • 6. Heat some vegetable oil in a frying pan on medium heat. Once it is hot enough, gently fry each side of the rolled dough in it.
  • 7. Set aside until ready to eat.
  • Shrimp Cream Stew
  • 1. Devein and remove the shells of the shrimp.
  • 2. Slice the onion and mushrooms.
  • 3. Melt the butter in a frying pan and sauté the onions, mushroom, and shrimp in it.
  • 4. Add the flour and sauté until it starts to thicken.
  • 5. Add the white wine and sauté until most of the alcohol burns off.
  • 6. Add the cream.
  • 7. Season with salt and pepper to taste.
