Matcha Mango Sticky Rice

INGREDIENTS
- • fresh mango slices
- Matcha Sticky Rice
- • 1 cup glutinous rice
- • ½ cup coconut milk
- • 2½ Tbsp white sugar
- • 1 tsp Aiya Culinary Grade Matcha, sifted
- • ¼ coarse sea salt
- Matcha Coconut Sauce
- • ½ cup coconut cream
- • 2 tsp sugar
- • ½ tsp Aiya Culinary Grade Matcha, sifted
DIRECTIONS
- 1. Rinse the rice well and let it soak in water overnight.
- 2. Steam the rice: place rice in a bamboo steamer lined with cheesecloth. steam for 30-35 min until rice is fully cooked.
- 3. Make coconut milk mixture: in a saucepan, whisk together matcha powder, sugar, and sea salt. Pour in the coconut milk as you whisk. Bring up to boiling, then turn off the heat and let cool. Set aside.
- 4. In a mixing bowl, combine the steamed rice with coconut milk mixture. Cover and let it rest for 10 min to allow the rice to absorb everything.
- 5. Make Matcha coconut sauce: in a saucepan, whisk together sugar and matcha. Pour in coconut cream as you whisk. Bring to boiling and stir for 2-3 minutes while water evaporates and thickens the sauce. Remove from heat and let it cool.
- 6. Serve Matcha sticky rice with fresh mango and a side of matcha coconut sauce.
