Matcha Kababayan

Filipino Kababayans (muffins) are a staple in Filipino bread shops. This easy to make recipe includes a Matcha twist and is the perfect snack to satisfy your cravings between meals.

INGREDIENTS

  • Dry Ingredients
  • • 1 Tbsp Aiya Culinary Grade Matcha
  • • 1½ Cups All Purpose Flour
  • • ⅓ Cup Brown Sugar
  • • ⅓ Cup White Sugar
  • • 2 tsp Baking Powder
  • • ½ tsp Baking Soda
  • • ½ tsp Salt
  • Wet Ingredients
  • • 2 Large Eggs
  • • ¾ Cup Milk
  • • ½ Cup Vegetable Oil
  • • 2 tsp Vanilla Extract
  • • 2 Tbsp Melted Butter

DIRECTIONS

  • 1. Pre-Heat Oven to 350°F.
  • 2. Spray muffin tin with baking spray.
  • 3. In a bowl combine all the dry ingredients: Matcha, flour, both sugars, baking powder and soda and salt. Mix well taking out any lumps.
  • 4. In a separate bowl combine all the wet ingredients: eggs, milk, oil and vanilla extract. Mix well until nice and smooth.
  • 5. Add the dry ingredients to the wet ingredients. Mix with a wooden spoon lightly. Just until combined.
  • 6. Using a spoon or ice cream scooper, fill each muffin cup half way only. This helps you get more dome!
  • 7. Bake for 15 minutes until the edges start to brown and you see the dome formed.
  • 8. Take out of the oven and brush with melted butter.
  • 9. Remove from the muffin tin and place on a wire rack to cool.
