Matcha Peach Sago Drink

This Matcha Peach Sago Drink by The Nerdie Baker is for the boba lover that loves a balanced taste of sweet and umami.

INGREDIENTS
- • 1 whole ripe peach
- • 1-2 tsp honey
- • ¼ cup sago pearls
- • Ice
- • 120ml milk of your choice
- • 1¼ tsp @aiyamatcha culinary grade matcha powder
- • ¼ cup hot water
DIRECTIONS
- 1. Peel the skin of the peach, slice it up and roast for about 10 minutes at 350F to soften the fruit. In a bowl, mash up the peach and drizzle some honey to sweeten it. Adjust the sweetness to your liking.
- 2. In a separate bowl, soak the sago pearls for about 30 minutes. In a saucepan over the stove top, bring a pot of water to boil. Add in the sago pearls and cook until the sago is almost translucent. Once cooked, drain and rinse them through cold water. If not used immediately, soak them in cold water to help maintain the chewiness.
- 3. In a small bowl, sift the Matcha powder. Pour in hot water and whisk it until frothy.
- 4. In a tall glass, add in peach puree, sago, ice, milk and lastly Matcha to create all the distinct layers. Stir and enjoy!
