Enjoy this tropical twist on a traditonal mochi recipe. Inside is a juciy ataulfo mango wrapped in a chewy Matcha mochi. It's the perfect snack to enjoy as summer ends


Matcha Mango Mochi

INGREDIENTS

  • • ¾ cup (120g) glutinous rice flour
  • • 3 Tbsp (40g) sugar
  • • 1 Tbsp (8g) cornstarch
  • • 1 tsp (2g) Culinary Grade Matcha, sifted
  • • ⅔ cup milk
  • • 1 ripe ataulfo mango, peeled and halved

DIRECTIONS

  • 1. Whisk together flour, sugar, cornstarch, and Culinary Grade Matcha.
  • 2. Add milk and fold into a thick paste.
  • 3. Microwave 2-3 minutes until translucent and doughy. Let it cool enough to touch.
  • 4. Divide the dough in half and roll them out into an oval, about 1/2 cm thick.
  • 5. Wrap one piece of mochi around one half of a mango. Pinch the ends closed then trim off excess.
