Matcha Kababayan

Filipino Kababayans (muffins) are a staple in Filipino bread shops. This easy to make recipe includes a Matcha twist and is the perfect snack to satisfy your cravings between meals.

INGREDIENTS
- Dry Ingredients
- • 1 Tbsp Aiya Culinary Grade Matcha
- • 1½ Cups All Purpose Flour
- • ⅓ Cup Brown Sugar
- • ⅓ Cup White Sugar
- • 2 tsp Baking Powder
- • ½ tsp Baking Soda
- • ½ tsp Salt
- Wet Ingredients
- • 2 Large Eggs
- • ¾ Cup Milk
- • ½ Cup Vegetable Oil
- • 2 tsp Vanilla Extract
- • 2 Tbsp Melted Butter
DIRECTIONS
- 1. Pre-Heat Oven to 350°F.
- 2. Spray muffin tin with baking spray.
- 3. In a bowl combine all the dry ingredients: Matcha, flour, both sugars, baking powder and soda and salt. Mix well taking out any lumps.
- 4. In a separate bowl combine all the wet ingredients: eggs, milk, oil and vanilla extract. Mix well until nice and smooth.
- 5. Add the dry ingredients to the wet ingredients. Mix with a wooden spoon lightly. Just until combined.
- 6. Using a spoon or ice cream scooper, fill each muffin cup half way only. This helps you get more dome!
- 7. Bake for 15 minutes until the edges start to brown and you see the dome formed.
- 8. Take out of the oven and brush with melted butter.
- 9. Remove from the muffin tin and place on a wire rack to cool.
