Vegan Matcha Sugar Cookies

INGREDIENTS
- • ½ cup vegan butter
- • 1½ tsp Matcha powder
- • 1 flax egg ( 1 Tbsp ground flax mixed with 3 Tbsp water)
- • 2 tsp vanilla extract
- • ½ cup miss jones
- • 1½ cup all-purpose flour
- • ¼ tsp baking powder
- • ½ tsp baking soda
- • ¼ tsp salt
DIRECTIONS
- 1. Preheat your oven to 350°F
- 2. First add your softened butter, sugar, and Matcha powder to a mixing bowl. Cream together until light and fluffy, about 1 minute.
- 3. Then add in the flax egg and vanilla extract. Whip together about 10 seconds to combine.
- 4. Next, add in the sifted flour, baking powder, baking soda, and salt to a mixing bowl. Mix until a thick and slightly sticky cookie batter forms. Do not over-mix!
- 5. Add parchment paper to a baking sheet and start forming your cookie dough. You can use a 2 Tbsp cookie scoop or just roll them into the palm of your hand.
- 6. Place the Matcha cookie dough balls on the baking sheet and slightly press each one down with your palm.
- 7. Bake for 11 – 13 minutes or until the bottoms are slightly browned. You want the cookie to have a soft center.
- 8. Allow the cookies to cool for a few minutes before eating.
