- • 2 egg yolks at room temperature
- • ¼ cup (40g) sugar
- • 1 cup plus 1 Tbsp heavy cream
- • 2 Tbsp Aiya Culinary Grade Matcha
- • ¼ tsp salt
- • 1 tsp vanilla extract
- • 3 Tbsp sugar for the sugar topping
